Harvested from select areas of our Shiraz blocks our Hard Hill Road vineyard in Great Western, these sections were selected for their flavour intensity and structure.
Vinified in one small open fermenter, with natural and inoculated yeasts, we hand-plunged the fermentations three times per day, before allowing the wine to rest on its skins for another month. The wine then matured in French 500L puncheons for 18 months.
Intense dark berry and black pepper, violets, chocolate, some cassis and cured meats, before a long and fine tannin finish.
While already presenting a seamless balance of fruit depth and structure, it will continue to evolve and gain further complexity and character with decades of cellar time.
